Monday: Veggie night and we're doing veggie pot pie soup. It is a great way to combine my soup "addiction" with meatless Monday.
Tuesday: We're back to having meat in our diet and I'm making sausage and peppers...bread is optional!
Wednesday: I love trying different takes on tacos. I stumbled across Korean bbq chicken tacos and had to add them to my list!

Friday: I've been adding quinoa into a lot of our recent recipes because of the great nutritional properties. Vegetarian quinoa chili sounds like another great option.
Saturday: Nothing says home like fried chicken but I'm giving "fake" fried chicken a try to make it a little neater and healthier.
